Light of the World Lemon Bars

 

 

       1 lemon cake mix

       ½ cup butter softened

       1 egg

 

       1 pound of confectioner’s sugar or powdered sugar

       3 eggs, beaten

       1—8 oz package of cream cheese, softened

 

       half egg shells, cleaned and dry

       sugar cubes

       lemon juice  

Mix together first three ingredients and press into a lightly greased 13 X 9 pan. Mix next three ingredients in a large bowl and pour over top of uncooked crust. Bake at 350 degrees for 35 minutes or until top is a light golden brown and set. Cool for an hour and then cut into bars big enough to sit half egg shells on top of to form a candle. Cover and refrigerate.  

When ready to serve place a bar on each plate. Put a clean, half egg shell with open jagged edges on top. Place a sugar cube inside. Pour some lemon juice on the sugar cube and then light with a match and turn off all the lights. You now have Light to expose the darkness. After flame is extinguished, remove egg shell and eat lemon bar! Delicious!
